    Hi Venessa.....This is Lorena (and Danny!)!!!
    Here's my chili recipe:


    Lorena's Vegetarian Chili

    1 T olive oil
    1 lg onion, coarsely chopped
    2 cloves garlic, chopped
    1 red bell pepper, cut into 1/2 inch chunks
    1 green bell pepper, cut into 1/2 inch chunks
    2 cans (30 oz each) kidney beans, drained
    1 can (28 oz) diced tomatoes in juice
    1 can (15 oz) tomato sauce
    1 cup frozen Niblets corn
    3 T chili powder (I prefer Schilling)
    3 T dried minced onion
    2 t sugar
    Optional garnishes- chopped red onion, cilantro, shredded cheese, lime slices

    Saute onion in olive oil over medium heat until translucent. Add garlic, saute 2-3 minutes. Add bell peppers, saute 3-5 minutes. Add the rest of the ingredients (except garnishes!) and simmer over medium-low heat for 45 minutes to 1 hour. Serve with garnishes and tortillas, cornbread, or crackers.
